EwE - Shrimp Pad Thai Salad


For Eating with Ellie this week, Glennis chose Shrimp Pad Thai.  This was a healthy version of pad thai - no egg noodles or peanuts here, just rice noodles and spicy sauce with cabbage and carrots and prawns and bean sprouts.

I actually didn't mind this at all - it is not as tasty as a traditional pad thai, but it is also not as fattening.

Looks good although I love the peanuts in it. We made a Pad Thai in Thailand recently and it rekindled my love of this noodle dish! :D Shrimp is my favourite addition to it :)

I ate mine with chicken but I love it with shrimp (though my husband doesn't). Also tofu is a good way to eat pad Thai. I love your big wide bowl - beautiful.

I have never had real pad thai salad before so I had nothing to compare this with. But I loved it. I cannot say enough good about this recipe!!

I didn't get to this one last week so I will make it for the makeup week as I am looking forward to it...all of you (except Margaret) seemed to really really like it! Am excited to find out for myself when I make it. Yours is certainly very pretty.
