Carrot and Cardamom Cake for Sue



Today is Sue's last day at work with us.  To send her on her way, I made her a going away cake.  I had wanted to make the Carrot and Cardamom Cake from The New Nordic cookbook for a while (recipe online here), so this was a good opportunity to get around to it.

The cake smelled amazing while it was baking.  All of the spice smells wafted through the house, creating the most enticing aroma.  It was all I could do not to just dive in!

I made this on a weeknight so the decorations are simple - Queen chocolate writing icing (which seems to work much better in the warmer weather when it isn't gummed up in the tube) and whole walnuts.

I was pretty happy with the result, especially as it was not a night that I wanted to be baking.

Ooh what a lovely flavour! Scandis really love cardamom in baking and I really like the aroma that it gives! :D

Dear Gaye that cake looks so delicious - so I took a look at the New Nordic Cookbook - it looks amazing, I think I might add it to my Christmas wish list. Your cake must have been a huge hit with all your co-workers, such a nice gesture to bake it as a "going away gift"!

Looks fantastic - just posted your lovely honey carrot cake you posted recently but with parsnips - so am in carrot cake mood! And I admire your icing writing - it is not my forte

I love spice cakes! This one sounds amazing. Carrot cake is always a winner.
