EwE - Lemon-Tarragon Chicken with Squash Ribbons



For Eating with Ellie this week, Kayte chose Lemon-Tarragon Chicken with Squash Ribbons.  This dish comprises pan fried chicken breasts paired with ribbons of zucchini and yellow squash.

To serve, I also made the parsley potatoes that Ellie suggests as a side, and Neil Perry's roasted cauliflower with lemon and mustard.

This was a really tasty weeknight dinner that did not take a long time to prepare.

Oh yours looks great and I love all those other sides you chose to make with it as well. We really liked this...classic French with shallots, chicken, tarragon, lemon...I was one very happy camper with this recipe. So easy to do as well. :-)
