EwE - Corn and Couscous with Sausage


For Eating with Ellie this week, Margaret chose Corn and Quinoa with Sausage.  However, as I cannot stomach that kin-wah stuff (literally), I subbed in cous cous.  This was then dressed up with corn kernels (I used tinned), capsicum and spicy chicken sausage.

This made a very tasty one pot dish that I took to work for lunch.  I enjoyed it a lot, so this is another Ellie recipe that gets a tick from me.

I'd love this with veggie sausages! Cous cous or quinoa version - one pot meals with grains and corn are my kind of thing.

This looks very good with quinoa or couscous. Such a simple idea but looks great too. I love corn! :D

We really liked this one as well...Mark has requested it again before it was gone the first time...lol! Yours looks great and I bet couscous was a great choice for it as well. I loved all the colors in this one.
