WWDH - Vegetable Stir Fry



We are going healthy this week at Wednesdays with Donna Hay, as Margaret has chosen Donna's Vegetable Stir Fry from p70 of Modern Classics I.  The recipe is also online here.

This recipe is just what is says on the tin - a large variety of vegetables stir fried with soy sauce and a small amount of sugar.

I generally like my stir fries a bit saucier, but that could easily be fixed by upping the soy sauce.  I loved the roasted cashews - they added some lovely crunch to the dish. I served this with a can of tuna one day, and some shredded chicken another.

I often eat stir fry because I don't enjoy veges any other way! Love the addition of roasted cashews :D

I like a bit of sauce too especially if you serve it with rice but as you say you can easily add more soy sauce.

What was good about this also is how fresh the veggies are with a minimum amount of cooking. Your photo with its vivid colors says HEALTHY.

This vegetable stir fry is so exciting to look at...all that vibrant green just scream healthy and delicious and feel good about eating it all! Nice choice Margaret made. Your photo is outstanding.
