Wednesdays with Donna Hay - Potato and parmesan soup, sans parsley pesto
This week's Wednesday with Donna Hay recipe was selected by Kayte of Grandma's Kitchen Table. She chose Donna's potato and parmesan soup with parsley pesto.
I am not really into pesto, so I skipped that and just made the soup. The soup is pretty easy to make - the hardest part is peeling and chopping the vegetables.
The end result was a very thick soup that is quite tasty, but reminded me of cheesy mashed potatoes.

I have to agree with the previous commenters and say that if this soup tastes like cheesy mashed potatoes, it must be awesome.
It did...it tasted like Parmesan cheesy potatoes! I added the pesto and it was really nice with it, just a little (her version had no garlic so that's the way I made it as well). Easy and delicious, win win! Yours looks good just sitting there waiting for someone to dig in.
The bowl is perfect for setting off the soup. I love cheesy potatoes and cheesy potato soup.

It's interesting, your blog is the first I had ever heard of Donna Hay, but then just yesterday as I was cruising through the local book store I saw that they had quite a few of her books in stock. All translated into german no less. Are you using one of her books in particular?
I love pesto but have found parsley hard to get recently which seems odd as usually it is the only herb there! sounds like a nice soup
