Cheese-topped onion soup
This week's French Fridays with Dorie called on me to make something that I would never have made on my own - onion soup. Yes, it's called cheese-topped onion soup, but the cheese is actually on a slice of bread that sits on top of the onion soup.
First you caramelise some onions:
then you had some chicken stock and spices and boil it all up to make soup:
then you grate some Gruyere, slap it on a slice of toast, grill it to melt the cheese, then float it on top of your soup.
Surprisingly tasty! I lied it. If you hate onions, this recipe is a bust, but I actually enjoyed it more than I thought I would.

May I just say that I am in awe of your ability to keep up with so many cooking groups. I have often been tempted to pick up another one, but then I remember that I am barely able to keep up with the one. I just can't ever seem to get organized.
As for the soup, I agree that it's a good one.

This is a recipe I would love. Nothing better than onion soup on a cold winter day--but you are in summer!

Looks like you've worked on more than one caramelizing onions recipe this past week. Mine took forever...two would have taken the whole week. Your soup looks like it has great color. You are right, only onion lovers can really enjoy this soup.

probably an odd comment from a vegetarian but I thought that french onion soup traditionally had beef stock rather than chicken - I have made a veg version which was ok but I think the quality of the stock makes a difference

The onion soup looks fantastic, however, I saw your blue cheese and caramelised onion brioche and fell in love. I love all things blue cheese, including hamburgers. Everyting looks terrific.
I wouldn't normally get excited about onion soup, but it sure looks good with the cheesy bread on top!
Your soup looks perfectly browned. My soup was a pasty imitation of French Onion! I just don't think I had enough patience!

Your soup looks yummy! I didn't get to make mine until late night yesterday - so I will post later. So glad that I made it.
It's overcast, windy and cool today unlike our 90 degree weather last week...maybe I'll give it a try tonight with the benefit of scheduling lots of time to brown onions. This looks delicous!
I have actually made this one as FOS is my favorite thing on earth. It would be my last meal. Seriously. My friends all know that any restaurant we go to, if it is on the menu, it is in my order. This was a good recipe, not my absolute favorite, but very good. It was the first thing I made when I got the book. Yours looks delicious.
Just the thing for a winter lunch. Pity it never gets that cold here. Or does it... *goes off to build weather machine*
