Cheese-topped onion soup
This week's French Fridays with Dorie called on me to make something that I would never have made on my own - onion soup. Yes, it's called cheese-topped onion soup, but the cheese is actually on a slice of bread that sits on top of the onion soup.
First you caramelise some onions:
then you had some chicken stock and spices and boil it all up to make soup:
then you grate some Gruyere, slap it on a slice of toast, grill it to melt the cheese, then float it on top of your soup.
Surprisingly tasty! I lied it. If you hate onions, this recipe is a bust, but I actually enjoyed it more than I thought I would.
Check out some more onion soup at the LYL link on the FFwD website.
I never thought it would be so easy to make a cheese top! YUMMY :) I love onions so this is perfect for me hehe ~
ReplyDeleteYeah, I guess you would have to like onions with this one :-)
ReplyDeleteHave a great weekend!
May I just say that I am in awe of your ability to keep up with so many cooking groups. I have often been tempted to pick up another one, but then I remember that I am barely able to keep up with the one. I just can't ever seem to get organized.
ReplyDeleteAs for the soup, I agree that it's a good one.
Cheese please!
ReplyDeleteYour soup turned out great, and it looks like you caramelized red onions. How yummy!
ReplyDeleteLooks like another great Dorie recipe and a bowl of cheese topped onion soup that I'm now craving after visiting a few FFWD bloggers!
ReplyDeleteHave a nice weekend;-)
Thanks Patty you have a good weekend too.
ReplyDeleteThis is a recipe I would love. Nothing better than onion soup on a cold winter day--but you are in summer!
ReplyDeleteLooks yummy.
Looks like you've worked on more than one caramelizing onions recipe this past week. Mine took forever...two would have taken the whole week. Your soup looks like it has great color. You are right, only onion lovers can really enjoy this soup.
ReplyDeleteYours looks perfectly caramelized and delicious! I could have gone for more cheesy toasts and less soup :)
ReplyDeleteYour caramelized onions look fantastic. How long did that take. I love FOS s enjoyed this more than most. Glad you liked it also.
ReplyDeleteprobably an odd comment from a vegetarian but I thought that french onion soup traditionally had beef stock rather than chicken - I have made a veg version which was ok but I think the quality of the stock makes a difference
ReplyDeleteFabulous! I love French Onion soup-the more onions the better! :P
ReplyDeleteThe onion soup looks fantastic, however, I saw your blue cheese and caramelised onion brioche and fell in love. I love all things blue cheese, including hamburgers. Everyting looks terrific.
ReplyDeleteI wouldn't normally get excited about onion soup, but it sure looks good with the cheesy bread on top!
ReplyDeleteYour soup looks perfectly browned. My soup was a pasty imitation of French Onion! I just don't think I had enough patience!
ReplyDeleteWe really enjoyed this, too. We'll definitely make it again! Yours looks nice & rich - just as it should.
ReplyDeleteoh yes - big bowl of this please!
ReplyDeleteI thought this was great too! I really loved the melted cheese on top of the crusty bread it was perfect!

Your soup looks great!
ReplyDeleteYour soup looks yummy! I didn't get to make mine until late night yesterday - so I will post later. So glad that I made it.
ReplyDeleteIt's overcast, windy and cool today unlike our 90 degree weather last week...maybe I'll give it a try tonight with the benefit of scheduling lots of time to brown onions. This looks delicous!
ReplyDeleteI have actually made this one as FOS is my favorite thing on earth. It would be my last meal. Seriously. My friends all know that any restaurant we go to, if it is on the menu, it is in my order. This was a good recipe, not my absolute favorite, but very good. It was the first thing I made when I got the book. Yours looks delicious.
ReplyDeleteJust the thing for a winter lunch. Pity it never gets that cold here. Or does it... *goes off to build weather machine*
