Do you like salads? Generally, I regard them as a side dish, and would rarely choose them as a main course. However, this week's French Fridays with Dorie dish is a main course salad - bacon, egg and asparagus salad, to be exact.
The salad is comprised of mixed salad greens dressed with vinaigrette, then topped with boiled asparagus spears (also dressed with vinaigrette), chopped crispy bacon and a gooey soft boiled egg that has been recooked in bacon fat.
I didn't get as much gooey yolk on my salad as I would have liked as my poor egg got a hole in it when I was shelling it, so quite a bit of gooey yolk oozed out. Still I enjoyed the salad, although it is definitely not what I'd choose for dinner in the middle of a frosty May night ordinarily.

I just adore salads like this and often get my butcher to cut his bacon thick and then cube it into lardons for me to use in similar dishes.
I guess it's more appropriate for the northern hemisphere, where asparagus is in season. It looks pretty tasty to me!
Wow - strange to think of a frosty May night! Especially, since we are finally just starting to lose the frost up in the Northern 'sphere... I can see where this one would not be the first thing you would turn to this time of year!
That looks like it is packed full of flavour. I like salads if they're substantial! Otherwise I just end up hungry afterwards!
Your salad looks delicious! I can only eat a salad as an entree at lunch. At dinner, I usually like a bit more of something. Great post!

This salad is a main course in itself. I had mine for lunch and it totally filled me up right until dinnertime. Must've been the egg, or bacon, asparagus, or the greens! :-)
I really enjoyed the salad, although I wish I had the right ingredients for the vinaigrette! I had it for dinner but could definitely see myself enjoying this as brunch.
Yes, I wouldn't choose this to serve on a frosty night either - we warmed up a again the last few days here. Your salad looks great! I love the larger bits of bacon and even though you didn't get the runny yolk I am sure it tasted just as good.
Awww it's too bad that you lost some yolk. It is indeed the best part. Still, the salad is pretty delicious.
I actually love salads for dinner, but mostly in the warmer weather. With your weather being the opposite of ours, I can see why this wasn't "seasonal". I loved this one.
Southern Hemisphere participants are at a disadvantage in this cook-a-long - we're moving into summer here, while you're battening down for winter there. We loved this salad - it's definitely main dish material.
I am not a lover of salads, no, but they can be a great vehicle for yummy, less healthy goodies like cheese and stuff :D. Without some good stuff sprinkled in it, I'm not that interested.
