TWD - Caramelized-Coffee Bean Pots de Creme and Croquets


This is the last November Tuesday with Dorie - Baking Chez Moi, and I have made both recipes for this month.  I paired the Caramelized-Coffee Bean Pots de Crème with the Croquets, following Dorie's suggestion to pair the pots de crème with cookies.

The Caramelized-Coffee Bean Pots de Crème called for crushed coffee beans to infuse the custard.  I didn't have coffee beans, so I just used instant coffee.  It seemed to work just fine.

I served the pots de crème with vanilla icecream as well as the croquets:


The second recipe was for Croquets, biscuits made from egg whites, flour, almonds and sugar.  The ingredients are mixed together, formed into logs, baked and sliced:


The resulting cookies are crunchy on the outside, chewy on the inside, and quite sweet.  They were a good match for the slightly bitter coffee pots de crème.

Wow you got such a dark colour with the instant coffee - did you caramelize that or just infuse the custard? Looks good with the croquets!

My God, this sounds delicious. My husband doesn't like coffee, so I rarely make any coffee flavored desserts, but I think I'm going to make this just for myself.

Oh those croquets looks so beautiful, like a big biscotti but softer. I definitely have to bake some of these and paired with the coffee is just a perfect dessert.

At first I thought you made chocolate since they were so dark. It was nice to make these together since the eggs get split up between the recipes. I liked both of these too.

Pairing the croquets with pots de creme is a nice touch! I didn't have time to bake the croquets and wish I'd made them when I made my pots de creme.

Oh, wow, doesn't that look good! I really like that you used ice cream instead of whipped cream....a great combination.

I did caramelise the coffee - I think I used too much for the quantity of custard (I only made a third of the recipe). I like coffee though, so it was all good!

Dear Gaye, what a lovely pairing - those white and elegant looking Croquets with the almonds and the deep, dark delicious sounding Coffee Pôts de Crème. These look just fabulous together!
