EwE - Tuscan Kale Salad


For Eating with Ellie today, Kayte chose Tuscan Kale Salad from p41 of Weeknight Wonders.

I have never cooked with kale before, and I have to say, I wasn't a big fan - it tasted a lot like grass, even with the lovely raisins and toasted pinenuts.   (For some background, I am not a green salad girl.)

To make it more palatable, I served it with yesterday's WWDH spaghetti, making it just another green leaf in the spaghetti.

Ah! That is too bad. I think it tastes better if you massage it a little more. It still tastes like a green leaf, though, of course. So maybe kale is not your best salad choice. No worries, there are plenty more leaves in the garden, eh!

I like cooked kale, but generally more through stir fry cooking and with some seasoning...it's hard to know if I'd like this or not but it sounds appealing with the sultanas!

I too am not a kale fan so i subbed some other greens. But this was an easy and flavorful salad!

I am not much of a green salad girl - have tried kale salad at home and not quite got it but have had a few when I have been at cafes that I have really loved and I think the trick is to get a really good dressing - don't quite understand the whole massaging thing. I keep hoping one of these days I will make one at home that I love as I do love to cook with kale

I do like kale but you are not alone, in our group, in not liking kale. That said, I had spinach in the house and used it, in place of the kale.

Try it some time with other greens and you may like it better.

I do like green salads, but I like kale a lot more when it's cooked in any way. Raw kale is not one of my favourites.

Well you are a good sport for playing along! I had never had it or cooked with it before either, and it turns out we really loved it. I had heard that one needs to massage the kale with the dressing to tenderize it so I did that for about a minute and it turned out really good. That said, we are salad lovers here, so the chances of us liking it were good going into the whole deal. :-) Thanks for giving it a try!
