FFWD - Guacamole with Tomatoes and Bell Peppers
This week's French Friday with Dorie recipe does not, at first blush, appear to be very French. It is for Guacamole with Tomatoes and Bell Peppers, which seems rather Mexican in flavour. However, we are assured by Dorie that in France, guacamole with chips is all the rage, hence the reason for this recipe appearing in her book.
I was pleased that the guacamole was a quick and easy recipe to make. I made it for breakfast (why not?), and served it on a crumpet with smoked ocean trout and a poached egg:
The lovely runny yolk mixed with the guacamole to give the dish a lovely rich flavour:

Breakfast guac! What a perfect way to enjoy this frenchified version. (Maybe it would have been more French if we used shallots instead of red onion :-) )

I loved this too but am not needing to make it again simply so I can put it on a crumpet (actually it's going to have to be toast here in France, no crumpets!) with a poached egg. Brilliant idea!

Wow, now THAT looks amazing! I didn't like the idea of adding bell peppers, but I love the idea of pairing avocado, lox, and a poached egg.

What an interesting idea! I don't think I've ever had guacamole for breakfast (maybe with huevos rancheros), but I do love avocado with eggs.
