Cardamom Layer Cake with Raspberry Buttercream and Jam for Mara


On Wednesday last week, it was my colleague Mara's birthday.  I love making birthday cakes, so I made Mara a Cardamom Layer Cake with Raspberry Buttercream and Jam.

The cake recipe is unusual in that it contains no butter or oil.  It is the Cardamom Cake from Lomelino's Cakes, the recipe for which is online here.  Instead of making two layers and slicing them, I used my Wilton six-inch layer cake tins (compliments of Kayte).


I filled the layers with raspberry buttercream (based on my favourite Primrose Bakery vanilla buttercream recipe) and raspberry jam:


and topped the cake with more raspberry buttercream, and decorated it with chocolate letters and cute little sugar decorations from Coles:



I made a little cupcake with icing for myself so that I could try the cake, and loved its lightness.  The cardamom is quite subtle and doesn't overwhelm the delicate flavour of the cake.

Mara said she and her family enjoyed this cake, including her non-sweets loving Dad.  I call that a win!

I'd call that a WIN for sure, Gaye!!! I just had to look up the recipe and yes, lo and behold, no butter or oil, a good thing in my book.

I sure do wish I worked with you, I'd say everyday was my birthday. lol...Your co-workers are super lucky to have a baker amongst them who loves to bake and share:)

what a gorgeous cake - I am in admiration of your many layers as I just find layer cakes so challenging - shame there isn't a photo of a slice but I am sure it looked fabulous

The lack of butter/oil is impressive, as indeed is the whole cake. Like Johanna I find layer cakes a challenge so like your efforts!

What a great cake! I love cardamom, but can't recall a cake having a teaspoon of it, so this is a must try. Love your little cupcake on the side! Thanks for the recipe.

What a fun and cute cake, all those little decorations are so cute and you can personalize it so nicely with those. Would love to taste this cake...intriguing the way you describe it and the ingredients or lack there of! Happy you are getting use of the little pans...they make for such a cute cake! It's my birthday today and I am sitting here wishing I lived close enough that you would make me one of your wonderful cakes!! :-)
