EwE - It's In the Bag - Cajun Chicken with Vegetables in Foil Packets
This week's theme for Eating with Ellie is "It's in the Bag", chosen by Kayte. She spoke about parchment, but there were no parchment Ellie recipes that I could find. However, she does do a line in cooking in foil packets, which is where I went with this theme.
The only "in the bag" recipe in Weeknight Wonders has already been made by the group, so I had to look elsewhere for a recipe. I chose Ellie's Cajun Shrimp in foil packets, but substituted chicken for the prawns.
This was such a delicious dish - chicken that has been coated in cajun (creole) seasoning, poached in a foil packet in the oven with sausage (I used saucisson), chopped capsicum (peppers) and frozen vegetables (which I used instead of corn), with a "sauce" made from olive oil and white wine.
This one is a definite keeper - but I'd say that about most of Ellie's recipes.

Dear Gaye, what a delightful interpretation of one of Ellie Krieger´s recipes - nice swap (chicken for prawns) with wonderful seasonings all wrapped up into one wonderful dinner!
I really enjoyed this one with the prawns (shrimp) but I am going to try it with the chicken next time. Too easy, and too good, not to make again. Yours looks so tasty.
Hi Gaye, Love meals in parchment and foil, I think that method makes the meat nice and moist. Beautiful dish you created.
Looks great with the chicken, too. I can see where this recipe would be just fine with either/or. I think in terms of this kind of cooking being done in either foil or parchment, I just happen to prefer parchment and always have it on hand for recipes like this. Yours looks really delicious, I would be thrilled to sit down to that!

I eat lots of chicken breast..this is surely a perfect dinner for me.
I love cooking things in bags / parcels. The flavours here sound delicious.
