WWDH - Vegetable Laksa


For Wednesday with Donna Hay this week, we are transported to Malaysia by Sarah for a Vegetable Laksa
 
A laksa is a spicy noodle soup, and comes in a range of different flavour combinations.  Ours is a vegetable laksa with sweet potato, snow peas, chilli, bok choy, bean sprouts and coriander, using bottled laksa paste and coconut milk.
 
I was not very enthusiastic about making this, but I loved the finished product.  It was spicy but not too hot, and was the perfect lunch on a cold winter's day.

I'm mad for soup nowadays in this cold weather. The laksa sounds like it would warm me up very nicely! :D

I love laksa but rarely make it at home because it is fiddly - this looks nice and simple

I didn't get to make this last week, but NOW I have some Laksa so it is on my list this week.

I wasn't going to make this one as I couldn't find the laksa but your photo certainly looks wonderful and it looks like just the sort of thing I would LOVE so I guess I better do a better search for Laksa.
