For Eating with Ellie this week, Margaret chose the theme of "Eat More Chicken". Ellie has lots of fab sounding chicken recipes in Weeknight Wonders, so the hardest part this week was choosing just one.
I went for Ellie's Chicken Florentine Roll-ups, mainly because I had goats cheese left over from last week's recipe that I didn't want to waste, and this recipe happened to use it.
These roll-ups were so delicious - they comprised chicken breasts filled with goats cheese, spinach and sun-dried tomatoes. Seriously good! The chicken was moist and tender because it was braised in chicken broth.
I served mine with a random array of veges, including baked sweet potato filled with leftover Florentine mixture:

Your Chicken Florentine Roll-ups look really good, and healthy! I hear you on selecting recipes based on what is on hand, I am constantly surveying frig and thinking, what can I make with these ingredients...and Eat Your Books is great for helping me figure it out. :-) We eat lots of chicken here, need to get to this one soon.
I just got around to making a recipe for Eat More Chicken...made Chicken with Tomato-Onion Chutney from Weeknight Wonders and I agree, so hard to pick just one recipe, so we should definitely do this theme again...so I can make your pick as that looks wonderful to me. Your choice does look so good.
