Pumpkin Cake

 
On a recent trip to the market, I picked up a piece of pumpkin on spec, knowing that I could bake with it.  The biggest hurdle was deciding what to make from the dizzying array of recipes I found.  In the end, I chose Alan Campion and Michele Curtis's Pumpkin Cake, primarily because I had all of the ingredients.

I had roasted and mashed the pumpkin on the weekend, so it was all ready to roll for some mid-week baking.  Don't worry too much about lumps in your mash - they get beaten out in the mixer. 


This cake was admired at work for its bright orange colour and its moistness - it was a hit.  I really enjoyed it too, but next time might amp up the spice.  I also think it would be lovely topped with cream cheese frosting.

I love pumpkin cake - and also love it when all the ingredients are in my kitchen - this looks like a great seasonal bake

That looks so pretty, the color is just lovely. I'm not the biggest fan of pumpkin in the world, but this does look wonderful...and if you put cream cheese frosting on it or drizzled on it, I'm there for sure. You find the most interesting recipes, I don't think I have ever seen pumpkin cake before. I might convert on this one...sort of like you and soup these days! :-)
