Raspberry and Almond Upside-Down Cake
I often find Facebook intrusive, with it throwing up ads, "suggesting" friends and pages, and showing me old posts in case I want to repost them. If I wanted help, I'd ask! However, every now and again, one of their suggestions is worthwhile, and so it was with "suggesting" that I like Donna Hay's Facebook site.
Recently in my news feed, a recipe popped up from the Donna Hay Facebook page suggesting that I make their raspberry and almond upside-down cake for the weekend. Why not, I thought - it looks delicious!!!
Ad so it was:
I used less raspberries - just a normal 300g bag from the supermarket, rather than 1kg. Sure, I had less raspberries on top of my cake than Donna's version, but given the price of raspberries, this was fine by me!
I served my cake with a dollop of Greek yoghurt:
Super delish!!! Definitely a "make again" recipe.

I hear you on the price of raspberries! Anyway, even with the reduced amount, it still appears to be sufficient for the cake - looks great!
Dear Gaye, I believe that raspberries are some of my very favorite summer berries and you are right, they always tend to be on the more pricey side - your cake looks absolutely wonderful the way you baked it, just perfect with that afternoon cup of tea or even with my present morning coffee!

I don't like those intrusive Facebook suggestions and ads either, but if they resulted in this, perhaps they are worth it sometimes! This looks really delicious, just my sort of cake.
1 kilo of raspberries is quite a lot especially if you are using fresh. I remember seeing large punnets of them overseas but I think I'd go with your ratios here.
This cake looks pretty and delicious, my favorite combination in a cake! I have never seen a raspberry upside down cake before so that was fun. Donna Hay has a FB page??? Well...I need to get on that right away. I'm pretty hopeless when it comes to FB, I forget to go and see what people post and then everyone says, "It was on my FB page," and I feel like an idiot not knowing that...oops. That said, I'm certainly happy that you and I are FB friends! :-)
