TWD - Blueberry Crumb Cake


This week's Tuesday with Dorie is hosted by Sihan of Befuddlement. She has chosen the Blueberry Crumb Cake.

What can I say - I am in love:


It's fruity, nutty, buttery and delicious - I loved it from the get go. It was easy to make, and the only thing that I would do next time is to line the bottom of the tin, because all of that fruit makes unmoulding a risky business.
I dedicate my Blueberry Crumb Cake to all the people who are victims of the Black Saturday Bushfires in Victoria. The blueberries that I used were frozen from the early summer, and I felt a pang when I realised that they had come from Kinglake, one of the towns that was razed by the bushfires:

I loved this cake too. My blueberries sunk to the bottom though - yours look perfectly dispersed!

That looks fabulous. I am still deciding whether to make this. CAn I make it Low Carb??? Yours looks delicious.

So many people affected by the horrible fires, either there or here in the US. Our hopes that they can get past it all and have a good life.

I ADORED this cake and am currently trying to hold back from having another piece. Works great with margarine and soy milk for a diary free option.

I love that you got a picture of the cake bottom! I could only get mine out of the pan piece by piece.

Wasn't this one yummy? I think lining the pan is an excellent idea. I want to make this one again when blueberries are in season...I bet it's even better with fresh.

I cut mine right out of the pan, but I think I might do it a springform next time. That way it could unmold and not lose any of the yummy topping.

Sweet dedication to the fire victims; it's sobering to have a reminder of such as challenging time.
