This week’s Tuesday with Dorie recipe is They Might Be Breakfast Cookies. These cookies earn their moniker because they are packed with oats, coconut, honey and dried fruit.
I used dried apples and cranberries as stated in the recipe, but you can use any dried fruit. The trick is to chop the fruit small, as otherwise it will be hard to form the cookies.
These cookies are fairly soft. They are quite nice, but they didn’t take my fancy enough to make them again.

I liked these - think they needed some chocolate though!
When I've tried adding a lot into cookies, it becomes quite a challenge to get the texture right. But for a quick breakfast on the run it sounds like it would do the trick!

I'd eat these any time of day! Bill would ask for chocolate, too (and for me to leave out a bunch of other ingredients, LOL).
Our cookies were at opposite ends of the spectrum this month, either too much butter and chocolate or healthy breakfast.
Dear Gaye, I love a good breakfast cookie and these look exactly like the cookies I would enjoy with my morning cup of coffee!
