TWD - Strawberry Shortcake Cookies


This week's Tuesday with Dorie recipe is Strawberry Shortcake Cookies.  The name is a little misleading because they are actually little sponge cakes topped with cream and strawberries, rather than cookies.


Dorie suggests that you put a strawberry compote in the middle of the sponge cake before piping on a ring of whipped cream and topping with strawberry slices.  I used red jam instead of making the strawberry compote - worked just fine.

They make the cakes look very fancy - my mum loves to put cream and strawberries on her sponge cakes and it is always a delicious combination.

This has taken me back to age 3 when I liked the strawberry shortcake character! I've been intrigued by strawberry shortcake products ever since and this looks a refined afternoon tea option.

They look delightful. I have always wondered about strawberry shortcakes. I thought they would be brittle and flake away, but yours sound light and stay-togethery. I want to make these!
