EwE - Sensational Salads - Shaved Brussels Sprouts Salad with Hazelnuts and Dried Apricots



Our Eating with Ellie theme this week is Sensational Salads, chosen by Kayte.  I chose to make Ellie's Shaved Brussels Sprouts Salad with Hazelnuts and Apricots from Weeknight Wonders.

Ellie states that this is a variation on coleslaw, perfect for a barbecue.  I simply served my salad with pan fried fish and steamed sweet potato.  I was not sure how this salad would go, but I really enjoyed it.  The Brussels sprouts have a slightly peppery flavour which makes the salad a little different to the usual, and the apricots add sweetness, while the hazelnuts add crunch.

I tried a blanched Brussels sprout salad a while back and it was really good. I tried recreating it at home too and as you say it lends a really nice crunch to a salad :D

So great you are still just using WW for your dishes. If I liked sprouts this would be a great salad!

I'm not a huge brussels sprouts fan but really like the idea of adding hazelnuts and dried apricots.

Oh this brussel sprouts salad looks fabulous...let me see, let me see...yes, I have those ingredients so I might have to take a break here and make that for lunch! YUM!

Finally got around to making a Sensational Salad this week and posting it today. I forgot that I made this salad and took a photo of it so now I need to wait for the next category to be able to use this one, it was so good. I love Brussels sprouts so this was perfect.
