FFWD - Croquants
For French Fridays with Dorie this week, we were assigned one of our last dessert recipes - nutty, meringue based cookies called croquants.
I had wanted to make these for ages, so I was really pleased with this week's pick. The recipe sounded just like cookies that are served alongside coffee in one of my favourite chocolate shops, Ganache Chocolate.
Croquants are super easy to put together - they are just chop, stir, dollop and bake cookies. For the nut component of the cookies, I used chopped roasted almonds.
These crispy cookies are perfect on their own, although as Dorie suggests, they would also make lovely icecream sandwiches.
To see what the other Doristas thought of the croquants, visit the LYL section of the FFWD website.

These were easy, weren't they? Was thankful for an easy one this week!
I can't believe I haven't heard of croquants before. I love meringues, and I think these would be sensational!
Oh my those look wonderful. Cookies are a favorite around here...I need to pull out the book and make these.
ha ha - I was thinking it must be a croissant crossed with a ?????? They do look v good
i Loved how easy these were. Making cookies normally makes me grumpy, but I didn't mind these.
It was nice not to have a fish meal wasn't it. These were a big hit with my crowd.
A friend of mine loves cookies to go with her afternoon tea. I must bake these for her!
Glad these were a hit. I wasn't much of a fan, but at least it was an easy recipe :)
Your cookies turned out great!
Great-looking croquants! Glad you all loved them--we do, too!
These cookies were not only easy, but incredibly delicious! Definitely a winner for me! Yours look beautiful!
These were good, but I wish I had seen the ice cream sandwiches suggestion earlier. That sounds excellent!
This is a perfect recipe for leftover egg whites and
possibly any leftover nuts around. It really
was quite easy and so delicious.
I never inspired to bake, but you saying how simple these cookies are to make, no shaping and the texture looks so nice...might have to try them.
I really liked these too. I liked the taste AND how easy they were to make.
Yours turned out beautifully. I like making mine extra chunky, but I agree they'd make excellent ice cream sandwiches made as elegantly round as yours.
Gaye, your croquants look wonderful, chock full of lovely roasted almonds - what a nice cookie to enjoy alongside a wonderful cup of coffee indeed!
Have a lovely weekend,
Andrea
What a great twist on meringues. Yours look great!
mmm ice cream sandwiches! I still have some so maybe we will add ice cream for later! I was glad for a dessert for this week too. :)
It was nice to have a dessert for a change wasn't it. I liked these too. Have a great week.
