WWDH - Smoky roasted gazpacho



This week's Wednesday with Donna Hay is Smoky Roasted Gazpacho from Modern Classics Book I, chosen by Chaya.

This gazpacho contains roasted tomato, garlic and onion combined with paprika and water to make a cold spicy soup.  It was easy enough to make, and interesting to learn, but not something that I fancy enough to make again.

I was wondering what you would say about this. It sounds like something you would get in a restaurant as an amuse bouche or similar!

I'm never very sure about cold soup - my mind just doesn't quite compute that it is soup - but I'm impressed you made this and at how authentic it looks.

I am glad I loved it since I picked it. No one else is enthralled with it. I drank several mugs full.

I just loved this soup...the roasted tomatoes and peppers really did a nice flavor combination in this recipe. I will make this again and again...it is just the sort of thing I love. I loved that the peppers were such a pronounced flavor in it as well. Yours looks so beautiful in that glass.
