FFwD - Roast Chicken for Les Paresseux

My French Fridays with Dorie choice for this week was made for me - Roast Chicken for Lazy People. You line a casserole with a slice of bread, season a chicken inside and out with salt, pepper and herbs, put the chicken on top of the bread, then throw in some garlic, onion, carrots and potatoes, cook on high heat in the oven for 90 minutes, and dinner is served!

The best part of the dish is the bread in the bottom of the pan:

Yes, it looks like some old piece of hide that's been left in the sun, but it tastes delicious! The bread absorbs the pan juices during cooking, and becomes flavoursome and meaty and rich.

You can check out what the other FFwD members made this week by visiting the LYL section of the website for this week.

Your chicken looks great! I'm jealous that your bread turned out so well. Mine got a bit mushy because of my overuse of olive oil. Another great post!

Your chicken looks great, mine looks just like it! I wrote my post last night and put it on delayed time until Friday, and the one thing I did not like was the bread...lol...that's okay, right, we can still be friends??? I don't like soggy bread...it was crunchy on the very bottom but soggy on the top and there was no way to separate the two. Oh, well, that's what is so great about this group, lots of people, lots of different tastes!

The chicken is the only one I haven't worked my way through yet. I am really getting a hunkering for that bread!

Wow, your bread looks really, really yummy! (As does your chicken.)

What kind of bread did you use? And how did you get it to get golden brown instead of blackened? Mine was good, but much darker! Definitely will be making this recipe again. Your chicken looks great, too!

I really liked the bread too, though I put mine back in the oven to crisp up. Glad you liked this, but roasting chicken when it's 31 degrees? We won't be seeing double digits around here for months, unless they're below 0 ones!
:)

Your chicken looks great, all plump and juicy. Accch, every time I see a picture of the bread, I get a craving for it all over again.

I could not see your photo of the bread - just the chicken, which looked great. And now I am intrigued - everybody has a different results with the bread! I am making the chicken next week, and I really want to have crispy bread to smear it with the liver...
I made the potato gratin and loved it.

Your blog is the first one I've seen that's posted a picture of the bread, it does look yummy! Hopefully mine turns out as well this weekend.

Your chicken looks yummy. :) My bread was only crispy on one side, and I didn't care for it. Chicken and veggies were good though, I thought.

Whoa. Is the final step "throw away the chicken and veg and eat the bread"? It looks good enough for it! ;)

Your bread is gorgeous! Mine was mush but it was my fault...will have to try again...and again...and again...until I get it right...what a sacrifice! ; )

Hi Christina, I just used high fibre white sandwich loaf - nothing fancy, as I am not a huge bread eater and I didn't want to buy special bread.

Another great recipe from Dorie!!

Your bread looks so delicious. Mine did not come out that crispy. I had quite a bit of juice in my pan but oh so good!
