FFWD - Guacamole with Tomatoes and Bell Peppers

This week's French Friday with Dorie recipe does not, at first blush, appear to be very French.  It is for Guacamole with Tomatoes and Bell Peppers, which seems rather Mexican in flavour.  However, we are assured by Dorie that in France, guacamole with chips is all the rage, hence the reason for this recipe appearing in her book.

I was pleased that the guacamole was a quick and easy recipe to make.  I made it for breakfast (why not?), and served it on a crumpet with smoked ocean trout and a poached egg:

The lovely runny yolk mixed with the guacamole to give the dish a lovely rich flavour:

To see what the other Doristas thought of this dish, visit the LYL section of the FFWD website.

Breakfast guac! What a perfect way to enjoy this frenchified version. (Maybe it would have been more French if we used shallots instead of red onion :-) )
Have a lovely weekend.

I loved this too but am not needing to make it again simply so I can put it on a crumpet (actually it's going to have to be toast here in France, no crumpets!) with a poached egg. Brilliant idea!

Who knew the French have embraced guacamole? Certainly not me, but I'm prepared to believe it!

YOu are Tre chic for making it a breakfast thing... just like the French are doing experimenting with it as something other than dip... I love it!

Now this is an idea worth writing home about. That runny yolk looks delicious. I love everything about this breakfast of yours. I cannot remember when I last had a poached egg. Maybe, tomorrow??? Nice Post, Gaye.

Your guacamole with the egg looks amazing! I love to have toast with avocado and egg, your version surely is fancy - in a good way! I love the idea.

Wow, now THAT looks amazing! I didn't like the idea of adding bell peppers, but I love the idea of pairing avocado, lox, and a poached egg.

I adore what you did with this one. I would never have thought to serve guacamole for breakfast, yet your combination is restaurant worthy! I'm going to try it myself one weekend soon.

Your photos of this look great! I cannot make guac without a substantial amount of people arriving to eat as I just keep getting into it until it is all gone...I love it so much. lol Don't ever trust me near the guac bowl!! Yours looks particularly wonderful.

What an interesting idea! I don't think I've ever had guacamole for breakfast (maybe with huevos rancheros), but I do love avocado with eggs.

You illustrate perfectly why one must always have guacamole on hand. I finished breakfast a mere hour ago but now you have me wanting another one. Well done!
