TWD - Biscuits Rose


This week’s Tuesday with Dorie recipe is Biscuits Rose. These pink tinted meringue cookies are Dorie’s version of Biscuits Roses de Reims, an 18th century treat.

“Biscuit” means twice baked. These cookies are not actually baked twice in the oven, but they are dried in the air before baking.

These cookies look pretty, and taste ok, but as Dorie notes, they are not very sweet. For that reason, they are not my cup of tea.

Such a lovely pink color! They taste best when dunked in tea or coffee (or champagne!).
