WWDH - Eggplant with tomato, basil and parmesan risotto

 

For Wednesdays with Donna Hay this week, Margaret chose eggplant with tomato, basil and parmesan risotto from New Food Fast.

This dish involves making a tomato risotto which is served atop pan fried slices of eggplant.  I served mine with some cottage cheese on the side.

I quite liked this dish - it was tasty, and it was very soothing stirring the risotto.

Chaya's right, the colour here is amazing! I also like eggplant but rarely make it because it seems a bit low on excitement compared to other vegetables. But I really liked this recipe.

As you said on the site comments, "Yum" and I agreed totally. We really liked this risotto. Some of us liked the eggplant more than others, lol, but generally I think the recipe was mostly about the risotto and that was a big hit all around. Yours looks good and I can see more of your eggplant than my photo, so that's nice. I do love eggplant! :-)

This was good, wasn't it. A little heavy but tasty. I think I could eat risotto every day.
