Wednesdays with Donna Hay - Baked Chicken, Lemon and Pea Risotto


Hey, hey, it's Wednesday, which means it's time for Donna Hay.

Before I get onto this week's recipe, I wanted to share with you my photos from my vacation on Norfolk Island last week.  You can find them here.  Norfolk Island is a truly beautiful place, and is a little different in that it is a quieter holiday destination than most - you can truly relax and unwind while enjoying its stunning natural beauty and learning about its brutal past, the Pitcairners settlement and current industry.  Norfolk Island is accessible by air from Brisbane or Sydney. I hope you enjoy the photos as much as I enjoyed taking them.

For WWDH this week, my pick was Baked Chicken, Lemon and Pea Risotto.  This dish took a while to make, as there is stove top prep to do before baking in the oven for 40 minutes, but the means justify the end - this risotto is absolutely delicious, and is a keeper for me. It results in a creamy risotto with a subtle blend of complimentary flavours.  I love the simplicity of baked risottos when compared with the traditional stove top method - I seem to have better luck with the baked variety.

Looks great, and looks just like mine so I must have done it right. Will be posted after midnight our time, also posting last week's Bok Choy recipe as I didn't get it done in time last week. This was a nice comforting dish you picked! I loved, loved, loved the photo tour...thanks for sharing that, it was such fun to look at all 176 photos! I will go back again and look at them more with a map so I can see where you were geographically, etc. Very nice, thanks for sharing all that...looks like a great time.

This looks delicious...like the idea of lemon and peas in the risotto...and great paired with the chicken...beautiful meal :)

Thanks for selecting this. It is a delicious dish and I love making risotto in the oven.

My husband walked in horrified that I was making rice in the oven. He has his special way of making brown rice, not aborio and thinks, it is the only way to make good rice. We changed his mind, last night.

Yours looks creamy and yummy. This can become a staple, in my house.

I have to check out your vacation photos.

just looked at your norfolk island pics - looks a fascinating place - am particularly interested in the progressive dinner - was it organised by cafes or people you knew and did you move from place to place?

Hi Johanna, it was arranged through a tour company. Most of the Islanders work 3 or 4 jobs, with some choosing to be progressive dinner hosts as one of them. A number of different tour operators run the dinners (ours was with Pine Trees Tours), with between 3 and 4 courses (we had 3, more than enough!).
