TWD - Cocoa-Cranberry Linzer Tart


 This week’s Tuesdays with Dorie recipe is Cocoa-Cranberry Linzer Tart. A soft nutty chocolate pastry encases a cranberry and raspberry fruit filling.


I was pleased to have frozen cranberries to use for this recipe, as cranberries are very hard to get here. 

In the filling, I used youngberry jam as I didn’t have any raspberry jam, and it worked well. 

Because the pastry was very soft, you had to work with it quickly before it “unchills”. Even then, my top disc of pastry didn’t behave, but I got there in the end.

This tart smelled divine as it baked, and tasted absolutely delicious.it is a great festive or anytime dessert.

Baked-in-a-skillet Gingerbread

This week’s Tuesdays with Dorie (Dorie’s Anytime Cakes) recipe is Baked-in-a-skillet Gingerbread. I didn’t have a skillet, so I used an 8” pie dish instead, and only made a half recipe. It contains both ground and crystallised ginger.



 Even a half recipe made a large cake. This one was ok, but I didn’t love it. I probably won’t repeat it.

TWD - Pistachio -Matcha Financiers


 This week’s Tuesdays with Dorie (Baking with Dorie) recipe is Pistachio-Matcha Financiers. These are little bite-sized morsels flavoured and coloured with - you guessed it - pistachio and matcha.


These financiers contain both plain flour and wheat flour, as well as ground pistachios. Once baked and cooled, the financiers are glazed with white chocolate.


These are little morsels of heaven- I ate two the day they were made.
