FFwD - Deconstructed BLT and Eggs


This week's French Fridays with Dorie features a nemesis of mine - salad.  I am so not a salad kind of girl.   The salad concerned is a Deconstructed BLT and Eggs - that's right, a sandwich reborn as a salad.

However, this particular salad surprised me - I made it for my dinner, and I loved it!  The salad comprises of aragula (I used baby spinach), sun-dried tomatoes and cherry tomatoes dressed with a mustard vinagrette, topped with chopped crispy pan fried bacon, croutons crisped up in bacon fat, and a hard boiled egg.  (You are also supposed to put mayonnaise on the eggs, but I wasn't buying a product I won't use for one spoonful on top of an egg.)

I was amazed at how well the bacon cooked up without any added fat in the pan - which makes me shudder at how the average fryup feautures bacon cooked in even more fat.

This salad was really very tasty, with its mxture of sharp, sweet and salty flavours, and I would definitely make it again.

Looks great. I made it a couple of weeks ago because I just couldn't wait to get to it and we loved it. Mayo always in the house here as hubby uses it on sandwiches, so I plopped a bit on mine. People add fat to fry bacon? Why would anyone do that??? I put it on a raised rack and bake it so it is not resting in the fat while it cooks and that works out pretty well. Still, bacon is fat no matter how you look at it!! lol

Happy to hear that you found a salad which you like. I love salad and ended up liking this one as well, though not quite as much as I like a good BLT.

And I think that the bacon issue depends on where you live and the bacon available in your area. When I lived in the US I never needed to add fat to the pan to cook bacon because it gave off enough of its own fat. However, here in Germany the bacon seems to be quite a bit leaner, and I do sometimes need to add some oil in order to keep the bacon from scorching. I used to feel guilty about this (I mean, adding fat to bacon somehow seems obscene!) but I have since read that David Lebovitz had to start doing to same after moving to France and so now I don't worry about it.

This is a terrific looking salad only to be further enjoyed by an increase in the temperature. Bring on Spring!

We loved this at our house. I can't imagine a house without mayo, but it's pretty much a staple for school lunches here!

I like this better as a sandwich, but I liked that you used soft boiled eggs... I was going to do that and thought twice, but I now I wish I had done that again. Did you like the vinaigrette?

Glad you enjoyed it! It takes a lot for a salad to win me over, and this one did. The bacon helped. I'd still prefer the sandwich, though.

I never heard of cooking bacon in oil!

That's wonderful that you were surprised by this dish. I really enjoyed the combination of flavours, too. In fact, I'd take this over a BLT sandwich any day.

I love your soft egg yolks! We might have found the salad more inspiring if I hadn't cooked the yolks to firm.

I'm with onewetfoot on this one. I've never been much of a BLT sandwich aficionado. I liked this salad, with its delicious vinaigrette, so much better.

Its nice to see you did not cook the heck out of the eggs. I'm going to get around to this one soon and I'm going to use the runniest eggs I can just to freak out the Doristas. Yum!

Next time, I'm going for the soft boiled eggs: yours look fantastic. We used some baby spinach along with the arugula.

I agree, there are lots of great flavors in this salad; I could eat it at any time of the day...even breakfast with those eggs. I love rainy days and the cooler weather sometimes...seems to keep my family inside doing things together instead of all our sunny days that keep us out and running around. There is something about bundling up and spending time with family and friends. I actually saw your great looking chocolate cake after this post...and that really makes me hungry. Nice baking.
