WWDH - Chicken Poached in Coconut Curry



This week, Kayte chose Chicken Poached in Coconut Curry for Wednesday with Donna Hay.  You can find the recipe online here. 

I really liked this dish - if I had bothered to make rice,  it would have been perfect to mop up the lovely coconut red curry sauce. I wish I had also used more sweet potato than I did.

    I have had chicken in so many styles...roasted, boiled, broiled, fried, but never poached! This looks amazing.

    Oh, this one was delicious, wasnn't it? Yours looks good and all those colorful veggies have me wishing I had a lot of colorful veggies, too. I never think to make chicken or sweet potatoes this way, but I will from now on!
