FFWD - Gateau Basque

 

For French Friday with Dorie this week, we used up one of our precious remaining dessert recipes, and made Gateau Basque.  This is a traditional Basque region cake made up of two pastry discs sandwiching either cherry jam or pastry cream.

I went the non-traditional route and used delicious Bon Maman raspberry jam for my filling.  I used a 9" pan, which made my gateau shorter than in the book, but I thought it was delicious anyway: 


This cake was easy and simple to make, and was so good just as it was.

I filled mine with pastry cream, but Bill would have loved your tweak with raspberry jam! Lovely!

This was way simpler than I thought it would be!
It is sad how few desserts are left in this book :-(

This was so good! I did go with the cherry jam, but I went raspberry picking and made raspberry jam last weekend, so I'll make raspberry when I do this next. Have a great weekend!

It was so lovely and delicious! I used 6.5 inch rounds and still felt it was a little shorter than the book but loved it anyhow!

I love how flat the pastry is- makes it seem easier to eat (like a sandwich!) haha :) It looks really delcious too! Really love pastry, so I love the ratio of pastry to filling!

Your cake looks beautiful! And I agree, what's not to love? I made mine the same size, and used home made strawberry... I thought it was delicious too - and surprisingly easy!!

It has been fun to read about all the different fillings that everyone is using. All the different flavors of jams and preserves could keep me in business for a long time. I've got a jar of lemon curd in my pantry. How about that mixed with a raspberry or cherry jam. Whether it was 8" or 9" doesn't make much difference, it was delicious, huh?

The Gateau Basque looks fabulous. I like how you refer to it "as the last precious dessert recipes..." and I would agree...dessert first! lol Nice photo.
