WWDH - Roast Vegetable Frittata

 I was having a dinner party, and one of my guests was vegetarian, so this frittata turned out to be a delicious choice for the main course, served with a bean salad and a tomato bocconcini salad:

I've been obsessed with friattas lately! I like them with artichokes and zuccini.

I am trying to eat more vegetables so am making more Frittata -= an easy way to get rid of vegetable leftovers. This one looks delicious.
