TWD - One Bite Cinnamon Puffs


 It’s 22 02 22!!

This week’s Tuesday with Dorie recipe is One Bite Cinnamon Puffs. These are little choux pastry puffs flavoured with cinnamon. 

You are supposed to top them with sanding sugar or pearl sugar to resemble chouquettes, but in lieu of either of these, I just used ordinary white sugar.

These little choux bites are quite tasty as is, but would be special served with chocolate sauce and vanilla icecream.

TWD - Swedish Dream Cookies


 This week’s Tuesday with Dorie recipe is Swedish Dream Cookies. They comprise browned butter, flour, cardamom, baking powder, salt and vanilla, with a chocolate covered almond on top.

As you can see, mine didn’t quite work for reasons that I cannot explain. They spread like wildfire and are quite flat and crumbly. Oh well, they taste ok.

TWD - Whip It Up Quick Cornbread



This week's Tuesday with Dorie recipe is Whip It Up Quick Cornbread from Baking with Dorie.   This cornbread is quite versatile in that the basic cornbread recipe has lots of optional mix-ins, including corn kernels, bacon, cheese and shallots. 


I didn't use any mix-ins other than sprinkling cheddar cheese on top.  I made the cornbread as individual muffin-sized  pieces, making 5 muffins from a quarter of the recipe.  So that the cornbread could be eaten by the rest of my family, I left out the peppers (black and cayenne). 
 

I think the muffins make great individual serves to have in a bread basket or similar at the meal table.

Rose’s Creamy Ginger Scones


 

I recently made Rose's Ginger Scones from The Bread Bible. These scones are made with whipped cream (I subbed natural yoghurt), crystallised ginger and ground ginger.  

These scones are not at all like the scones that I am used to - triangular instead of round, flattish instead of tall, a sticky dough and  quite sweet.  They taste good though, and are more like a cake or a biscuit than a scone from my perspective.

TWD - Mary’s Maine Bars


 This week’s TWD recipe is Mary’s Maine Bars.  These bars are best described as gingerbread without the ginger, packed with molasses (treacle in my case) and spices.

These bars are delicious on their own, but I reckon they’d be terrific served warm topped with custard.
