For French Fridays with Dorie this week, we are heading to the French Riviera for a very sunny Côte d’Azur Cure-all Soup. The story behind this soup is that it is a little like the French answer to chicken noodle soup - it is meant to have reparative qualities.
Whether it is actually a healing brew or not, I liked this soup (yes, I did). Unlike its fishy cousin, the Riviera fish soup, this soup had a really lovely, warm, comforting (non-fishy!) flavour. For once, my soup was also thin, so had a pleasing mouth feel. I served it with toast spread with hummus.
This week, I also made the only recipe that we have been slated to make so far that I deliberately avoided - Salmon in a Jar:
I deliberately skipped marinating the potatoes because I didn't want to waste more oil - I just boiled them and served them with the salmon.
This dish was, I am sorry to say, not my cup of tea, as I always suspected it would not be. It smells kind of funky, there is no way I'd eat any of the raw veg in the jar, and the salmon remains oily, even when the excess is wiped off with a paper towel. This recipe was made only to complete the "set", and so it will remain - definitely not a dish I want to repeat.

The soup looks great, I don't think I can think of many soups I would not love, so this one is a good one in my book. The salmon in a jar thing is a different story...not sure at all about salmon in a jar. You are such a good participant to make everything like you do. Your knowledge of food encompasses a huge amount just from the sheer number of things you have cooked and baked in all these years!
ReplyDeleteUm yeah I remember the salmon in a jar. It was odd to make (I didn't eat it) and not one that Neil has requested I repeat! The soup, though, now that was good!
ReplyDeleteI'm with you on the Salmon in a Jar. I thought it was gross. Gross enough that I can't bring myself to make the Dilled Gravlax, because it seems like the same general idea to me. No thanks. I loved the soup, too, though. I forgot how much I enjoyed a thin soup.
ReplyDeleteWe liked this one, too, though Bill wasn't so sure about ALL the garlic. I consider him eating a bowl a success. You're a trooper for backtracking and trying a recipe you didn't think you'd enjoy.

ReplyDeleteWow, I'm impressed that you are all caught up. I only have two on my list and both were also skipped on purpose, though for different reasons. I suspect that they will still be on my make-up list in 10, but we'll see. Sorry to hear that you didn't like the salmon, but at least you can have the satisfaction of knowing you tried every recipe.
ReplyDeleteMany have skipped said salmon in a jar. I think I will eventually get to it but I'm not i a hurry. I'm glad you liked this soup as did I. I particularly enjoyed the easy consistency and I was not even tempted to add any more egg yolks. I liked it just the way it was!
ReplyDeleteI agree that this soup was lovely, and restorative. I must be one of the only Doristas who actually liked the salmon in a jar. Congrats on being all caught up. I still have about 6-7 I missed, but don't know whether I'll catch up by the time we're done.

Gaye, nice looking soup - it has a great color and I like that you chose to serve toast with hummus alongside the soup - I baked some rolls, so this was more of a complete lunch. Your Salmon has a fabulous bright color - I always wanted to try that recipe but haven´t gotten around to it yet.

I'm impressed that you made salmon in a jar, even anticipating (correctly) that you wouldn't like it. There are a few I have intentionally skipped. I don't have any real plans to make them up :-) I'm glad you enjoyed the soup.
ReplyDeleteI loved this soup, too. When the salmon in a jar came up, I just made the potatoes, because none of my taste testers would have been willing to share it with me.
