WWDH - Dukkah-roasted chicken with cauliflower rice and tahini yoghurt
For Wednesday with Donna Hay this week, I chose dukkah-roasted chicken with couscous and tahini yoghurt from p54 of Issue 78 of Donna Hay magazine.
When I chose this, I didn't really think about the availability of dukkah to our other group members, as it is available in the supermarket here. However, everyone else had to make their own dukkah, as it appears not to be a commonly available item in the US - sorry folks.
As long as you have a sharp knife to cut the chicken, this dish is very simple to make. I bought chicken pieces instead of butterflying a whole chicken. Instead of couscous, I served my chicken with cauliflower rice. The combination of the dukkah, tahini and yoghurt with the chicken was sensational. To get my veges in, I served my chicken with stir-fried greens.

Isn't that interesting about dukkah! I guess that means that it might be good gift for overseas friends!

ReplyDeleteThis was a really tasty recipe, Gaye, thanks for picking it and introducing us all to Dukkah! I couldn't find it easily so I googled it and found a recipe to make it, very simple and easy with things I already had on hand. I made a small batch but still have some left to try on other meats and fish as it was delicious. I also learned how to take the backbone out of a chicken from this week's recipe...a week of learning! Yours looks wonderful and so do the dishes you served it with. I would definitely make this one again. :-)
ReplyDeleteThis does look like a yummy dish. We ended up going out of town and I got another icky cold so I decided to pass this week. I do want to learn how to make the dukkah though. Sounds like a great choice, Gaye.

ReplyDeleteTrader Joe's, which is in many American communities, used to sell their own brand of Dukkah, but I'm not sure they still have it. They are known for selling a product for a while then discontinuing it. It's definitely not mainstream here, as you say.
ReplyDeleteI wasn't familiar with "dukkah" but I am familiar with all the ingredients! It kind of reminded me of East Indian spices (cumin and coriander being in common). We enjoyed it...and I used chicken breasts rather than a whole bird. Thanks for the new taste treat!
