WWDH - Chicken and Roasted Capsicum Pasta - or Quinoa


This week's Wednesday with Donna Hay recipe was chosen by Margaret. She selected Donna's Chicken and Roasted Capsicum Pasta.

The only part about this recipe that I didn't like was peeling the skin off the roast capsicums - never an easy job, and it takes forever.  I used quinoa instead of pasta in keeping with my diet, and used balsamic vinegar instead of malt vinegar for the dressing.

The resulting dish was delicious, and I would make it again - with pasta.  Unfortunately, I have a quinoa sensitivity (nothing to do with washing the quinoa - I first suspected there was an issue when I was only eating the very processed quinoa flakes), which makes my gut burn for a couple of hours after eating quinoa.  Very sadly, I had to toss the the leftovers from this dish, but if you don't have a quinoa sensitivity, the quinoa makes a very serviceable alternative to the pasta.

  1. Oh, NO!! Hope you didn't suffer too long this time. I will have to try it with Quinoa as I am trying to eat more of it. Also for health reasons.

  2. Yikes...I love quinoa, so I'm truly sorry that it doesn't sit well with you. But I bet this dish would be excellent with pasta, too!

  3. I know what you mean about peeling the capsicum. I was given a tip a while back that once they're grilled, pop them straight into a plastic bag and leave for 10-15 minutes and the skins slip off easily. It makes a huge difference I promise :)

  6. I will have to try that capsicum roasting / peeling strip too! I so often can't be bothered but they do taste great that way. Also, I'm so sorry about the quinoa reaction! How awful.

  7. I kept wondering why this photo looked so different than mine this week...ah, the quinoa instead of pasta! Took me a few minutes. Wow, would be really disappointed if I couldn't have quinoa again, hope your symptoms have gone away by now, and now you know. Disappointing, I'm sure. This was a good recipe. We took the leftovers for lunches and it travels well and the taste gets better the next day, etc.
