WWDH - Corn Cakes


This week's Wednesday with Donna Hay recipe is my pick, Corn Cakes from p82 of Modern Classics Book I.  Chaya made the recipe outside of the group last year, and you can find the recipe (minus the bacon) here.  To make the recipe as per the book, just add four cooked slices of bacon that have been chopped.

These corn cakes were quite tasty.  I served mine with chutney, as Donna suggested.

The only thing that I didn't like about this recipe is all the washing up.  Even though I used tinned corn, there was still a lot of pans and dishes involved.  However, if you don't mind that, and cheese, corn, bacon and onion mixed together in a fritter sounds good to you, then you will like this recipe.

  4. I hardly ever make corn cakes but love them when I have them - so delicious hot and with a relish. These look great!

  5. Yes, I found that the corn cakes were a little involved too. I guess that's because the bacon and onions have to be cooked before the pancakes are made. It might be easier to think of these as "leftover items" cakes. Then you could throw in whatever cooked meat/veg you had. And add the cheese!

  9. Oh those look lovely, and I made the chutney as well (I kept sampling it and sampling it so it's a good thing I only made a small portion). There were a few steps to these, weren't there? That said, none of them difficult or unpleasant so I hope to make these again sometime soon. And, ok, maybe maybe it's because I want to eat them with that chutney again!
