TWD - Coconut Butter Thins

This week's Tuesday with Dorie is hosted by Jayne of The Barefoot Kitchen Witch, who has chosen Dorie's recipe for Coconut Butter Thins.

These biscuits are like a tropical shortbread, with flavours of coconut, lime and macadamias. They were relatively straightforward to make, although I chopped my macadamias a little too chunky for easy rolling.

There was nothing lacy or thin about my version of these biscuits, despite Dorie's description.

I liked these biscuits, although I didn't think they were special enough to make again.

You can see how everyone else went with these biscuits by checking out the TWD blogroll.

  5. They sound delicious although I have to agree they aren't as thin as I imagined them to be (I was picturing a langue de chat or something perhaps) :)

  6. I never roll anything thin enough! I've been lurking at TWD but did skip it this week because no one in the house likes coconut! But your shortbread looks scrumptious.

  8. I just finished making mine and I have to agree with you. I thought they were okay, but nothing special. Your squares turned out much nicer than mine. Mine got all wonky on me!

  9. (Most) of mine were thick like yours - I couldn't taste them of course - but all the cookies were gone from the work kitchen by the afternoon.

Hi Pinkstrpes, glad you liked them. They were certainly pleasant, but as Roux told Vianne, they're not my favourtie.

Hi Tammy, glad to hear that you liked them.

Hi Marthe, I will check yours out - I wanna see this lacy effect.

Hi Lorraine, maybe I should have rolled them thinner - but a lot of other people got shortbread too.

    Thanks Claudia.

Hi Pamela, it is amazing how TWD keeps surprising all of us.

Hi Susan, I was just lucky I think - I can remember having a dickens of a time with Dorie's sugar cookies going every which way.

Hi Lorelei, when the troops eat them, it is always a good sign.

  12. "Tropical shortbread" -- that is the perfect description. Mine were not thin or lacy either. We did love them though. Sorry they weren't your absolute favorites. They look wonderful, though!

  14. Saw your comment on A Duck in Her Pond last week when the Blonde Duck was gracious enough to let me post for her. Thought it would be fun to stop by and check out your blog. So glad that I did too.

You’ve got some tasty recipes here...a ton of things for me to try out with my kids. However, I'll stay away from the biscuits, based on your review. :)

  22. I think your cookies look fantastic! Mine came out very lacy and thin, but I wanted them thicker, so I forced them into tart shells! HA!

  23. I didn't get thin or lacey either, but I liked my shortbreads better than you did. Tropical shortbread - what a great way to describe it.

  25. I think these sound very buttery and delicious, but the general response seems to be the same as yours.

  26. I was out of gallon sized bags so I rolled some of mine too thin. They were lacy and much better than the thicker ones. Although I loved both versions.

  27. Mine weren't lacy either. But they didn't spread like some of the other's did. We liked them - a lot. But then we like shortbread.

    Yours look yummy!

  29. Hi Teanna, It would have made a lovel tart shell base, I think.

Hi Nancy, glad to hear you liked these.

Hi Amanda, that's great! Much better than if you didn't like them after all the effort.

LOL Em - I am not very good at keeping up with people's blogs, especially during the working week.

Hi Leanne, I didn't have those bags either - I just used cling film.

Thanks TeaLady - glad you enjoyed them.

    Thank Maria :)

Hi Arfi, Such a shame it doen't agree with you if you like it. No fair!
