FFWD - Croquants


For French Fridays with Dorie this week, we were assigned one of our last dessert recipes - nutty, meringue based cookies called croquants.

I had wanted to make these for ages, so I was really pleased with this week's pick. The recipe sounded just like cookies that are served alongside coffee in one of my favourite chocolate shops, Ganache Chocolate

Croquants are super easy to put together - they are just chop, stir, dollop and bake cookies.  For the nut component of the cookies, I used chopped roasted almonds.

These crispy cookies are perfect on their own, although as Dorie suggests, they would also make lovely icecream sandwiches.

I can't believe I haven't heard of croquants before. I love meringues, and I think these would be sensational!

i Loved how easy these were. Making cookies normally makes me grumpy, but I didn't mind these.

It was nice not to have a fish meal wasn't it. These were a big hit with my crowd.

These were good, but I wish I had seen the ice cream sandwiches suggestion earlier. That sounds excellent!

This is a perfect recipe for leftover egg whites and
possibly any leftover nuts around. It really
was quite easy and so delicious.

I never inspired to bake, but you saying how simple these cookies are to make, no shaping and the texture looks so nice...might have to try them.

Yours turned out beautifully. I like making mine extra chunky, but I agree they'd make excellent ice cream sandwiches made as elegantly round as yours.
