This week’s Tuesday With Dorie recipe is Mrs Corbitt’s Cake Fingers. It’s hard to describe these - kind of a meringue cookie with browned butter icing.
I thought I’d really like these, but they were a tad too sweet for me. I took Steph’s tip and thinned the icing with water rather than pressing it onto the cookies. I also iced the cookies before cutting them to save time.

These were also too sweet for me, I gave them all away (made 1/4 of the recipe). They were also fiddly and that icing? I don't know what to say!! I didn't thin mine and it completely cracked when I sliced them. Oh well. Interesting technique, I suppose!
ReplyDeleteWell, Bill wouldn't go for these anyway, so glad to hear this is a rare recipe of Dorie's that I don't need to make!!
ReplyDeleteSorry these were too sweet for you. We enjoyed these little fingers.
ReplyDeletei ddi enjoy these with strong coffee, and loved the icing, but i did have to cut them really slim. a little went a long way!
