TWD - Apricot Raspberry Tart
For Tuesday with Dorie this week, our recipe is apricot raspberry tart. This one is pretty straight forward - a sweet tart shell filled with apricot halves and raspberries, and decorated with pistachios:
It is not summer here, so I used canned apricots and frozen raspberries. The end resul was still pretty and delicious:

Looks pretty and delicious from where I am sitting! :-)
ReplyDeleteNo one would guess they were canned apricots! It looks great!
ReplyDeleteOh, how delicious. This features some of my favourite fruit and makes for a beautiful dessert!
ReplyDeleteGreat to know this works with frozen and canned fruit (I was thinking about you when everyone was going on about "summer fruit" and how this was a perfect recipe for this month!). Looks fab!
ReplyDeleteSo pretty! I love that you used canned apricots and it turned out just as delicious!
ReplyDeleteYour tart looks delicious. It makes me wish I had included the pistachios.
ReplyDeleteLike Mardi said, I also am delighted to know this worked out so well with the canned and frozen fruit. Yours tart looks gorgeous. Even though I am rolling in fresh fruit right now, frankly quite a bit of my own is going into the freezer because you can only consume so much of it all. Not to mention the fact that it is crazy hot right now and while it is fun to eat a refreshing tart....it is not fun to turn on the oven for an hour. I will have to work on that having my cake and eating it too concept :)
ReplyDeleteYour tart looks just beautiful, Gaye! Hopefully it brought a bit of summer into your week! Looks like frozen fruit works perfectly!
ReplyDeleteLooks as fresh and wonderful as any of the tarts I've seen! Great job making the fruit tart recipe work without using fresh apricots!
ReplyDeleteDo you remember, Gaye, when I made a tart last winter (in our hemisphere) with canned pears. It was drop-dead delicious and I made it three other times during the cold weather months. It almost made me consider why I waste beautiful fresh fruit in a baked dessert? Anyway, I am glad that you had the same experience. Your tart looks delicious and isn't it fun to have a fruit-something dessert in the winter. Miss you every week at FFWD.
ReplyDeleteI would have never thought that you used canned apricots, they look perfect. This was a wonderfully delicious tart, one that will be repeated.
ReplyDeleteGlad to know that it came out well with canned fruits. Still looked pretty.
ReplyDeleteit looks like it's summer there-- who can tell that that was not fresh fruit? pretty!
ReplyDeleteWe've got both raspberries and apricots in the market now, so I'm going to be making this one for a meeting, soon. I don't seem to be able to keep up with TwD, as no one in my family is willing to eat sweets of late, but I'm enjoying reading everyone's posts. :)
