For Wednesdays with Donna Hay this week, Margaret chose eggplant with tomato, basil and parmesan risotto from New Food Fast.
This dish involves making a tomato risotto which is served atop pan fried slices of eggplant. I served mine with some cottage cheese on the side.
I quite liked this dish - it was tasty, and it was very soothing stirring the risotto.

ReplyDeleteChaya's right, the colour here is amazing! I also like eggplant but rarely make it because it seems a bit low on excitement compared to other vegetables. But I really liked this recipe.

ReplyDeleteAs you said on the site comments, "Yum" and I agreed totally. We really liked this risotto. Some of us liked the eggplant more than others, lol, but generally I think the recipe was mostly about the risotto and that was a big hit all around. Yours looks good and I can see more of your eggplant than my photo, so that's nice. I do love eggplant! :-)
