My last Christmas goodie bag treat that I have to share with you is fruit mince pies. I used the Chocolate, Fig and Ginger Fruit Mince that I made to fill pastry cases made using Margaret Fulton's recipe, which is available online here.
The pastry is not as buttery as some, but the bonus for the baker is that it is easier to work with, even though I do prefer the buttery but notoriously pernickety short crusts.
I have some fruit mince left that I am going to use to make Christmas donuts from Donuts by Tracey Meharg that Tim gave me for Christmas. Good fun!
I don't make pastry enough to judge if it is buttery or not but I like to be able to have it not fall apart. Your pies look gorgeous and I just love that plate

ReplyDeleteYour fruit mince pies look amazing and I am sure the pastry is delicious, you do not want it to buttery at this hot time of year anyway, it can be harder to roll well. This bee plate is gorgeous, totally unique. Happy New Year Cakelaw :D

ReplyDeleteOh, I just love those little stars on your mince pies...such a creative and cute touch. I'm all about the cute in food as you know. That plate is adorable...what fun to own one! I always look at all the dishware everyone posts and I am the most boring of all, I have very little in the way of interesting dishware. Comes from living with guys, they wouldn't notice things like that so I don't invest. Maybe I will find one special find this year and see how that goes, inspired by your finds. :-)
