WWDH - Spicy Sweet Potato, Quinoa and Pancetta Soup

I really liked the body that this soup had. I made a half serving, subbed pancetta for speck and subbed cous cous for quinoa. It made two hearty servings, which made for two very good lunches.

I bet the couscous was as good as the quinoa. I use quinoa for so many recipes, these days.

ReplyDeleteI love sweet potato and quinoa in soup - but also cous cous and it is an easier substitution :)
ReplyDeleteBeautiful. I changed the speck for bacon but kept the quinoa and really liked it. Couscous is really just small pasta, isn't it, so that would be brilliant. I'm going to post this soup next Wednesday as I am a bit out of sync.
