TWD - Cranberry Crackle Tart


For our second Baking Chez Moi TWD recipe, our assignment was Cranberry Crackle Tart.  This tart comprises a shortcrust shell, filled with a layer of jam, and topped with meringue mixed with fresh or frozen cranberries. 

Sadly, cranberries, whether fresh or frozen, are not easily acquired in Australia.  I read online that cherries might be a good substitute for the cranberries, so that is what I used.  They are bigger than cranberries, so my tart is a bit lumpier than the one in the book, but it tasted pretty good:


A lot of people at work complimented me on it, which rarely happens because I bake so often, so this recipe obviously hit the spot.

  4. looks like an impressive tart - I am amazed with all the cranberry recipes that no one sells frozen cranberries here (wonder if they do in USA Foods which I think is in moorabbin - I have never been there)

  8. I'm not a huge cranberry lover but I adore cherries and I thought about substituting them in but they are out of season here. I bet this was great!

  12. Oh, I love cranberries, but I love cherries even more!! I bet a cherry version would be oh-so-wonderful. Looks great, especially with those big knobs of cherries peeking out! :-)

  14. Cherries sounds good! Fresh and frozen cranberries are not easily available over here too! I used dried cranberries which works out great.

  16. cherries sound like they'd be good in this (maybe raspberries or blueberries, too). I can't believe they've stopped complimenting you on your sweets at work --they are surely taking your baking for granted! :)

  17. Cherries sound fantastic. I was thinking it would be nice with blueberries in the spring. And maybe peach jam. Cranberries are rare everywhere if it's not November.

  20. Cherries sound great! Did you also use cherry jam to spread on the crust? I love the swirls of meringue--mine wasn't really swirl-able consistency.

  22. This would be great with cherries, too. We loved this tart and I can imagine why your co-workers made special note of it. It's a bit different from what most home bakers attempt (at least outside of France).
