WWDH - Creamy Spring Vegetable Soup



For Wednesday with Donna Hay this week, Kayte chose Creamy Spring Vegetable Soup from p18 of Modern Classics I.   You can find a list of ingredients here.

This soup had so many green vegetables in it so as to make the soup itself the side to the vegetables; however, this may have resulted from me trying to quarter the recipe but not succeeding to do so with the vegetables.  I took it to work to eat with my chicken for lunch.  It was pretty good if you like veges.

  8. I made a quarter of the recipe as well, and then another quarter changing it up a bit to make it a little more calorie-friendly as I loved the combo of veggies in this. This is what I love about DH recipes, I get a good base recipe from her and it works every time and I can also change it up in any number of ways. I'm glad you liked this as I know you are not the biggest soup fan that ever lived, lol. Having a scoop of all those veggies in your picture looks wonderful!

  9. I don't think "too many vegetables" is really a problem. It looks a bit like vegetables with a cream topping! Lovely, I think. What a great soup; I hope I can make it soon.
