Cinnamon Sugar-Coated Maple Apple Cakes
This is my first blog post back from my Route 66 trip. I scraped in making this week's recipe for Wednesday with Donna Hay the night before it was due. The last thing I wanted to do was to peel, core and grate six apples, as I am still suffering from jet lag. But hey, Cinnamon Sugar-Coated Maple Apple Cakes was my pick, and I had to do it. You can find the recipe online here. It is out of Donna's Seasons book.
The recipe calls for 12 x 1 cup mini bundt pans - unfortunately I didn't have these, so I made one huge bundt cake instead.

The verdict: delish. Warm and comforting and sweet, this is the perfect tea-time cake for any time of the year.

I really thought about making this into one bundt as well, but wasn't sure if it would work as well. Glad it did cause next time it will be one cake. Loved it. Thanks for this one.

DeleteOh, this was a great recipe. Mark doesn't care for cakes usually (he doesn't like frosting) so this was perfect...I was afraid I was going to have to eat and give away the little cakes, but he ate one and a half in one sitting (I ate the other half). Nice flavor and texture. Yours looks really nice in that bundt pan you used and I was happy to hear you had great success with using that size. Nice pick!
ReplyDeleteI almost made a large one also but I do have the minis so I used them. I am always afraid of getting them out of the pan but they came out easily. If you were jetlagged, I agree these were good inspiration.
ReplyDeleteWhy, why did I give my maple syrup to MrsDrWho?? I could have used it to make these delicious cakes, I'd make little ones!! Oh that looks so scrumptious and Autumnal, and I can eat everything in it too. Well done, grating through the need to sleep.

ReplyDeletemmm apple and maple syrup in a cake - sounds perfect for jetlag - eating not baking! I wonder if the little cakes would work as muffins - the inside looks so good - hope you had a great trip
