FFWD - Moules Mariniere
This week's French Fridays with Dorie recipe is a classic - Moules Mariniere (mussels in white wine broth). This is only the second time I have cooked mussels, but I learnt my lesson about the beards well, and this time, there were no nasty surprises in my mussels.
I used Sauternes as the wine, as I had some in the fridge. There's not much else to say about this dish - just that it was good.
I could only buy 1kg of mussels (for one person!), so with the leftovers, I made a mussel omelette the next day:
This was pretty good too.

What a great idea to make a mussel omelette! :D My favourite mussels are the live black ones. They're so good!
ReplyDeleteI also love the omelette idea- never would have thought of that ! I was surprised when Dorie suggested using them for salad as well. I guess when we usually serve mussels we don't have leftovers :)

DeleteYes, great idea on the omelet. We've made crawfish omelets, but never thought to do mussels!
ReplyDeleteI've only ever bought debearded mussels before. I'm pretty sure that the ones sold locally here in Italy will have beards. Should be interesting to remove them. Glad you liked this!
ReplyDeleteIt is pretty gross - a bit offputting - but speaking from experience, it's far worse if you leave them on!

Gaye, the omelet is impressive. Beautiful looking. My omelets are always on the "homely side". Your pix reminded me that working on my omelet technique is one of my winter projects. I certainly did not eat my 2 pounds of mussels and except for Dorie's Bonne Idee and Cher's suggestion to use with pasta, I had no tricks up my sleeve for the leftovers. And, I had lots of those little mothers to use up. Nice post and I am glad you liked this week's recipe.

Interesting idea for using up leftovers. My husband loves mussels so no matter how many I buy, we never seem to have leftovers.

ReplyDeleteI think mussels are great for a single diner. I used to make them often when I lived alone. An omelet with the leftovers sounds great. Interesting that the mussels I get here are typically beardless, but you are right, the beards are not very appetizing.
